"Research for Sugaring Fever began before making the trip to New Hampshire. I wrote to the Extension Service at the University of New Hampshire and obtained several names of syrup producers who were still using horses. One answered and said he used horses and his brother-in-law used oxen. I actually received answers from several people, but I could not resist oxen. At first it didn't look promising. The weather was not right. Another man in the same area had not planned on using his horses, but if nothing happened he and his wife would hitch a team to the sled and would make pretend we collected sap. Fortunately the weather broke and we were able to collect photographs on the entire procedure plus participate in a joyous occasion.
